Pumpkin Energy Bars - the perfect fall treat

In the mood for a little fall flavor without all the sugar? Try out these Pumpkin Energy Bars!


Fall brings pumpkin spice latte's, candy corn and pumpkins, among other yummy items; but if you're looking for something to satisfy that pumpkin craving without adding all the sugar (and a bonus of vitamins, minerals an protein), then these bars may be just right for you!



Pumpkin Energy Bars

Makes 16 bars


Ingredients

  • 2-cups old-fashioned rolled oats

  • 1/2 cup protein powder of choice (I like vanilla)

  • 2 Tbsp super seeds

  • 2 tsp pumpkin pie spices

  • 1/2 cup pumpkin puree

  • 1/2 cup almond butter

  • 1/3 cup Agave (or maple syrup)



  1. In a large mixing bowl, stir oats, seeds, protein powder, and pumpkin pie spices.

  2. Add in almond butter, pumpkin puree, and Agave.

  3. Stir the ingredients together with a silicone spatula until well mixed. If it becomes too dry, stir in 1-2 tablespoons water until well-mixed.

  4. Pour into an 8x8 baking dish or similar and cut into 16 bars

Store in container for 1-2 days. I like to make double or quadruple batches (I mean, I do have 3 growing boys in our home!) and freeze 1/2 of them.
